Mark Dommen is one of the most underappreciated chefs in the Bay Area, but you can see his talent any day at One Market. The restaurant has a large dining room and a corporate, impersonal feel, but Dommen's cooking has soul. Next year the restaurant, part of the Lark Creek Restaurant Group started by Bradley Ogden and Michael Dellar, will celebrate its 20th anniversary. While you can still find Ogden's Caesar salad and butterscotch pudding on the menu, the rest is pure Dommen. Try his six-course tasting menu, a great deal for $79 (wine pairings, selected from the all-American list, are $37). This is also a prime stop for lunch.
Specialties: Tasmanian ocean trout with potato rosti and pancetta vinaigrette; crab salad with grapefruit, elderflower and hearts of palm; bacon-wrapped pork tenderloin with dandelion persillade and salsify; petrale sole with mussels, clams and shrimp; chocolate toffee almond crunch cake.
Lunch 11:30 a.m.-2 p.m. weekdays; dinner 5:30-9 p.m. Monday-Saturday.
