Orlando Pagan, formerly of Silks restaurant, became chef earlier this year to fulfill Hiro Sone's East-West vision. Located in the St. Regis Hotel, this restaurant features a modern, elegant dining room warmed up with an open kitchen, sashimi bar and sheer drapes that cover the large windows and give an artistic rendering to the traffic on Mission Street. Sone, and his wife, Lissa Doumani, also own Terra in St. Helena. Pagan and Sone's menu includes chawan mushi, now served with clams, eel and lobster; and beautifully crafted and presented sashimi dishes. The must-order item, however, is Lissa's Staff Meal with cuttlefish noodles and sea urchin. The bar in the hotel lobby features a stylized fireplace and separate appetizer menu.
