Charles Phan continues to open restaurants -- Heaven's Dog in 2008 and a new Out the Door in 2009 -- but it's had little impact on his flagship, where he uses scrupulously fresh and mostly organic products for his top-rated Vietnamese food. He continues to set national standards. Shaking beef and clay pot chicken remain best-sellers, but he also offers such items as stir-fried chicken with ginkgo nuts, Chinese dates, walnuts and cashews; or wood oven-braised short ribs with lemongrass. The surroundings are as contemporary as the food with views overlooking the bay. Meticulously crafted cocktails and the wine list are first-rate.
