Food Cryogenics

Good control of refrigeration is the best way of ensuring the quality of your food products during production and transport. Air Liquide has developed refrigeration and quick-freezing equipment which uses liquid nitrogen (-196C or -320F) or carbon dioxide snow (-78C or -109F). These natural and environment-friendly products enable ultra-fast cooling and quick-freezing of your foods.

Quick-freezing and cooling in ZIP FREEZE or SILVERSAS tunnels

ZIP FREEZE cryogenic tunnels or SILVERSAS cryogenic chambers can handle most types of foods. They are compact, easy to install and maintain and offer highly flexible food cooling and quick-freezing due to their large temperature range (from +5C or -41F to -130C or -202F) and easy adjustment.

CRUST FLOW quick-freezing

CRUST FLOW cryogenic tunnels were designed to meet specific quick-freezing requirements. The Crust Flow V can individually quick-freeze small products such as diced bacon and grated cheese. The Crust Flow P can harden fragile, soft or sticky products such as ice cream.

Temperature control during crushing, kneading, mincing and other operations

To prevent food products from heating up during crushing, mincing or mixing, Air Liquide can install cryogenic fluid injection and regulation systems on your current equipment.

Controlled temperature transport

Carbon dioxide snow can be used to transport your fresh or quick-frozen products without breaking the "cold chain". The CARBOFRESH system makes it possible to simultaneously transport quick-frozen products at -18C or 0F, fresh products at +4C or +39F, and other products at room temperature, without requiring a complex refrigeration system.

Packaging with an ALIGAL™ modified atmosphere

ALIGAL™ is a line of food processing packaging gases specifically developed to preserve the quality and freshness of your products. Their production and distribution are subject to strict inspection and control.

There is an ALIGAL™ solution for each food or application, which includes gas, technology and service:

  • Recommending the ideal atmosphere and processing equipment for your product,
  • Providing advice on how to use equipment, select packaging films and hygiene
  • Training your personnel to use atmospheres
  • Working with our customers, in our worldwide research centers to continuously come up with new solutions.

Beverage Applications

Wine

Air Liquide has developed special equipment and applications which respect wine making tradition and the quality of the final product. It brings out the personality of each grape variety, preserves the nobility of each fine vintage and protects its quality, from the grape to the glass.

Carbonated beverages and beer

CO2 is used to carbonate beer and other beverages. Air Liquide guarantees its customers a reliable supply of high-quality CO2 where ever in the world they may be.

Non-carbonated beverages

Nitrogen may be used in many applications to preserve the quality of such non-carbonated beverages as iced tea, fruit juices or milk type beverages. They mainly involve deoxigenation and inerting.

Our Droppel machines also use liquid nitrogen to pressurize beverage cans and bottles made of PET (polyethylene terphtalate) plastic.

Draft beverages

CO2 and nitrogen cylinders are often used to serve drinks on tap (such as soft drinks in fast food restaurants and draft beer in bars).
