Pa. wines go both ways

So you have the perfect bottles of wine from your local Pennsylvania winery, now what meals best accompany the selections?

The usual advice about red wine with meat and white with fish and fowl can be misleading when it comes to Pennsylvania wines.

That advice is based on red wines that have a lot of astringency and a touch of bitterness in their makeup and whites that are characterized by a tart, acidic and refreshing character. With a few exceptions, our local reds often act like whites, sharp and thirst-quenching.

So the best picnic basket to complement either Pennsylvania reds or whites includes:

• Turkey breast sandwiches with a honey-mustard or hollandaise sauce, or some tuna salad.

• Smoked fish such as salmon or sable is another approach, since the wine takes the place of the lemon normally served alongside the fish.

• Bring a ton of fruit both fresh and dried - peaches and apricots are great. White raisins are fun too.

• Soft creamy cheeses and a loaf of crusty white bread are perfect. Try to latch on to a real, raw milk camembert, a talleggio or a runny vacherin.

• Vegetarians will want a grilled vegetable hoagie or cold slices of white pizza.
